We collect our Wild Thyme Honey from Central South Island, New Zealand. Thyme was brought to the area by miners during the gold rush of the late 1800s, who used it as a herb and medicinal plant. As the gold mining diminished, it slowly spread to become well established in the arid climate of Central Otago.
The strong flavour of Thyme Honey is delicious and when used in a savoury dish it enhances the savoury and sweet notes but adds a real punch so add gradually! It is a member of the mint family, and the aroma and flavour of Thyme honey are herbal, pungent and distinctive.
