Baking with Honey

Using Honey to replace Sugar in baking

Honey is naturally sweet so when you substitute it in recipes we always half the amount. for example, is 1 cup of sugar = 1/2 cup of honey.   Remember honey is liquid so you may need to reduce the recipe by approximately a quarter of the liquid too.

Honey can burn faster in baking so reduce the oven temperature or reduce the length of time.  Be aware that because of its viscous nature, honey is apt to make your baked goods more moist and dense.

Once you start replacing sugar you never go back!

Honey Oatmeal Cookies

Ingredients

  • 1 cup  Honey Dew Honey
  • ½ cup Butter
  • 1egg, beaten
  • 1 ½ cups sifted plain flour
  • ½ tsp. baking soda
  • ½ tsp.salt
  • 1 2/3 cups rolled oats
  • 4 Tbsp. sour milk or buttermilk
  • 1 cup raisins

Method

In a large bowl, cream together honey and butter. Beat in the egg until smooth. Sift together flour, baking soda, and salt. Mix with rolled oats. Add dry ingredients alternately with sour milk to creamed mixture. Mix well and stir in raisins. Drop by spoonfuls onto an ungreased cookie sheet. Bake at 190 degrees for 12-15 minutes. Makes 2 dozen cookies.

Sunny Honey Cake

Ingredients

  • 4 Eggs
  • 1 cup Sugar
  • 1 cup Oil
  • 1/2 cup Honey Dew Honey
  • 1 Medium orange, rind grated
  • 3 cups Flour
  • 3 tsp.Baking powder
  • 1/2 tsp.Baking soda
  • 2 tsp.Cinnamon
  • 1/2 cup Cold coffee, very strong
  • 1/2Orange Juice
  • 1/2 cup Walnuts, broken (or other nuts)
  • 1/2 cup Raisins 

Method

With electric mixer beat eggs with sugar. Add the oil, honey, coffee, grated orange, and blend well. Combine dry ingredients (flour, baking powder, baking soda, cinnamon) and add alternately with the liquid. Stir in nuts and raisins. Pour into an ungreased 10"" tube pan, and bake at 180 degrees for 15 minutes. Reduce heat to 150 degrees for 1 hour, or until the cake is done. Invert cake and cool before removal from the cake pan.

(Opt.) You may wish to give this a light sifting of icing sugar or if you wish, before baking adds 1/2 cup chocolate chips.
